Sweet spinach


  • Bring 1 inch of water to the boil
  • Place 2-3 cups of baby spinach into a steamer basket, place the basket over the pot, cover, and steam for 5-7 minutes
  • Blend in a food processor with 1 banana until it reaches the desired consistency

Roasted cauliflower with turmeric


  • Preheat oven to 425 degrees
  • Break one head of cauliflower into florets and place in baking dish with 2 tbsp of olive oil, ½ tsp of salt and 1 tsp of turmeric
  • Mix to evenly coat cauliflower with other ingredients
  • Cook in preheated oven for 25-30 minutes, stirring halfway through
  • Leave to cool for 5 minutes before serving

Black bean with corn and zucchini


  • Bring 1 inch of water to the boil
  • Place 1 cup of corn and 1 chopped zuchinni into a steamer basket, place the basket over the pot, cover, and steam for 7 minutes
  • Blend corn and zucchini in a food processor with ½ can of precooked, drained and rinsed black bleans

Spanish omelette


  • Heat 3 tbsp of olive oil in a pan
  • Add 1 thinly sliced onion
  • Add 275g of small, peeled potatoes, cut into round slices
  • Cook onion and potatoes in the pan for 20 minutes, stirring frequently
  • Whisk 5 eggs in a bowl
  • Pour egg mixture onto cooked onion and potatoes
  • Turn the pan to a low heat and cook the omelette for 20 minutes
  • Cook on the other side once there is no liquid left on top – do this by placing the pan under a grill on by turning the omelette onto a plate before sliding back into the pan
  • Cut into wedges to serve

Chicken and cheese enchiladas


  • Preheat oven to gas mark 6
  • Roast 2 chicken breasts for 20 minutes, remove and shred when cool – leaving oven on
  • Add 1 chopped onion and 1 chopped green pepper to a pan, cook gently until onion turns translucent
  • Add 1 tsp of coriander, 1 tbsp cumin, 1tbsp mild chili powder and stir
  • Add one tin of chopped tomatoes and heat for 5 minutes
  • Remove from heat and add chicken to mixture
  • Spoon mixture into 6 small tortillas and fold into a baking dish to keep mixture contained
  • Cut into small pieces before serving

Chunky vegetable chicken


  • Fry ¼ of finely chopped onion in olive oil until golden
  • Add ½ a chicken breast, diced, and fry for 4 minutes until browned
  • Add ½ a diced carrot, 100g of diced butternut squash, 50g of peas, 50g basmati rice and 250ml of very low stock (use ½ stock cube)
  • Add enough water to cover the contents of the pan, stir and bring to the boil
  • Cover and simmer for 30 minutes

Pasta with cream cheese and peas


  • Cook 50g of pasta according to instructions, adding 1 tbsp of frozen peas for the last 3 minutes, drain
  • In a separate pan, melt 50g of cream cheese
  • Add pasta and peas to melted cheese and stir

Rasberry & pear oatmeal


  • Bring ¾ cup of water to the boil
  • Lower the heat and add ¼ cup of rolled oats and cook for about 5 minutes, stirring frequently
  • Place one pear – washed, peeled and chopped – with a handful of raspberries into a food processor, blend until smooth
  • Combine puree with oats

Yoghurt pancakes


Mix the following ingredients together in a bowl:

  • 2 ½ cups of flour
  • 2 eggs
  • 1 cup of whole milk
  • 1 ½ cups of whole milk yoghurt (any flavour)
  • 3 tbsp of maple syrup
  • 1 cup blueberries
  • 2-4 tbsp of cooking oil

Fry the mixture one ladle at a time – less/more depending on preferred pancake size – for 2 minutes on each side, serve with fresh fruit.
